View Full Version : Easter Dinner/Easter Plans

So, what are your Easter plans? We are gonna have a little egg hunt with friends and stuff. There is a big hunt in town Saturday, probably do it too. Then, Sunday our friends will come over and eat with us after our little hunt.

My delima? What to COOK??? I bought a smoked spiral cut ham (will pick it up Sunday morning...all ready). I don't know what else to make with it. I am OPEN to recipes and suggestions. :D There will be about 6 adults and 10 kids. I am thinking of asking others to bring dishes too. I am so excited, I JUST LURVE EASTER!!!

I would serve au gratin potatoes, steamed green beans (with almonds if your family isn't picky), and some baked sweet potatoes. Just bake them and serve with butter and nutmeg. They are really good that way. You don't need all the marshmallows and brown sugar for them to be good. ;)

:rock I know but her dh has diabetes! :( Nothing like being on a particular diet because of your health and not being able to eat anything. :comfort I was hoping to suggest things that would be diabetes-friendly so he wouldn't feel deprived and the whole family could eat healthy. :flirt

Is the ham from the same place as the one from xmas dinner? that was awesome! Sorry I am missing out. I would ask people to bring a dish or dessert or something. I love broccoli and cheese, the augratin potatoes, oh and that corn casserole you make is soooooo gooood!!!. cold salads are good too and easy.

We are going to a egg hunt here Sat. and I am thinking of getting on the road Sunday evening. Marissa has no school monday but DJ does adn the last thing I need is more issues of absences in the school dist. KWIM?

Easter isn't all that big to me. We usually have a meal with my parents. The boys usually get a basket and do a hunt. The Country Club my parents belong to have an egg hunt and usually have bunnies and chicks out on the golf course. LOL

I am not sure what the plans are. Probably the traditional ham and such. My neighbors DH is working in CA so maybe I will be nice and invite her and the kids over to eat.

Thanks Bronte...I may do some steamed greens. I love sweet potatos, but DH HATES them. :giggle

I think a salad is a good idea, I'll do that too.

Yes, We5, the ham is from the same place. Maybe a potato salad since DH hates it, so he wouldn't feel deprived.

Don't completely cut out the foods he likes, just have them in moderation. It's a holiday so maybe serve one of those side dishes you know he loves and then the rest "healthier" versions. If you deprive yourself you will ultimtely binge and that is worst than a little treat. :hug ham sounds wonderful! :yum

jennifer granbury doesnt have school on monday! it is a weather make up day so we don't have to go back until tuesday! thought you might want ot know that if yall wanted to wait til monday to come back home!


hl, our favorite dish around here with ham is broccoli rice casserole! potato salad is alwasy great and of course sweet potatos with marshmellows or green bean casserole! omg i am hungry can you tell!!!:melikey

Oven roasted aspearagus (put in foil, drizzle a little EVOO and basalmic vinegar on it)... low carb!

Mashed califlower can work as a mashed potatoe substitute. I haven't tried it yet, but I was thinking about doing it sometime, with a little butter. Potatoes are so carby and Eli loves them, but if he would do mashed califlower, his sugar would be more stable.

All veggies are good... you can add bacon for flavoring (no carbs) - would be good with green beans.

How is DH doing, btw? I am sure it is hard to make a huge lifestyle change.

Lawd my southern Granny would swat you one..You MUST have brown sugar ( pronounced SU GAH) marshmellows however are optional..

Thanks Stacey! He is doing well. His sugars are already in the low 100's now with medication and carb counting. He is doing 60 carbs at meals and 15 at snacks. That is what the dietician said. He feels so much better and is so much more on an even keel with his attitude and all. The happy pills alone never made him this sane!

Hah! But eat all that sugar and you really hurt your body. And HL's dh has diabetes and can't have all that sugar. Have you ever tried sweet potatoes just baked with butter and nutmeg. It is :yum :D My grandmother used to cook with lots of sauces and stuff but when you cook more simply (i.e. steaming) and use fresh veggies and add a touch of seasoning, it is amazing how good food tastes in a more natural state.

Okay --- we do a variety of things that people can snack on that have low carb ---

I love pepperoni chips -- so do the kids -- microwave a layer of pepperoni on a paper plate for 1.15 minutes
Veggies with ranch dip (if you make it homemade it has far less carbs)
pork rines crunched up on salads instead of bread croutons(sp)
raspberries & strawberries in cool whip
a variety of meats & cheeses

If I have snack foods that is okay for me -- I so less tempted to eat stuff I shouldn't. Thus I only get a taste of the high sugar / carb stuff instead of filling up on it

Stacey, I have a awsome recipie for Potatoe Salad but instead of potatoe you use Califlower..if you want it let me know..you can not tell the difference at all..:)

We are not having a traditional Easter Supper this year as we have so much going on. So my menu consists of this.

Homemade Lasagna (noodles and all ;) ) Home Made Garlic, Herb and Cheese bread, Ceaser Salad, Spiral Cut Ham, perogies, and a brocolli cheese dish...:dunno

I was going to suggest this. I used to make it often when low carb dieting. Oh...add cheese too. It's like a loaded baked potato. Yum!

doesn't it defeat the dieting purpose if there sour cream, butter, bacon and cheese (all of my favorite things in the whole world :yum)

Yeah, but anything is legal (even a pound of bacon and a half dozen eggs) on Atkins as long as it's low carb. :lol
